Coconut Milk Rice Pudding

Most rice pudding recipes call for heavy milk, eggs or cream, this delicious and easy recipe uses just coconut milk, spices and cooked rice to make a yummy sweet treat!

  • 1 cup unsweetened coconut milk
  • 1 cup cooked rice
  • 1/4 tsp cinnamon
  • 1 tbsp brown sugar


  1. In the saucepan, over medium heat, bring the coconut milk to a slow boil.

  2. Reduce heat to medium low and add rice and cinnamon. Stir occasionally and cook for 5 minutes or until the mixture begins to thicken.

  3. Remove from heat and add brown sugar and continue to allow the pudding to thicken to your liking.

  4. Remove pudding from saucepan and either serve immediately or refrigerate until cool.
