Ingredients & Notes:

I love this recipe because you will not need a lot of ingredients to get started and barely any equipment. An oven, baking sheet and something to spread the bruschetta and cheese on your toast pieces will get you from start to finish! I like to use my Gotham Steel crisper tray, available on Amazon or in store retailers. If you don’t have one, a parchment-lined baking tray will work fine.

As for ingredients, you need a bread of your choice (I love a french baguette for ease of slicing), fresh or thawed from frozen raspberries (note, frozen will be softer so if you like your berries firmer, opt for fresh), fresh basil and ricotta cheese. With the addition of a few other items, you will have a delicious appetizer ready to go.

Substitutions or Variations

Raspberries combine with fresh basil and a few other things to create the star of this bruschetta recipe.

If you don’t like raspberries or want to experiment with a different flavor, there are many other fruits that come together with this recipe with delicious results.

Consider swapping the raspberries for other berries like blueberries or sweet strawberries. You can even try cherries or peaches if you would prefer those!

Serving Suggestions

Once your baguette toast is ready, the next step is a generous slather of ricotta cheese.

This treat makes a wonderful appetizer or snack. I’ve had raspberry bruschetta for a light vegetarian meal in itself as well.

Pair it with a citrus drink to bring out more of the lemon juice with the raspberries. Lemonade goes perfectly with it.

Storage Tips

To store this treat effectively, the raspberry basil mix can be stored up to 4 days in the fridge in an air tight container. I don’t recommend storing ready made slices of bread with the ricotta and raspberry mixture on top, store the three things separately for best results!

Raspberry Bruschetta

Try a deliciously sweet twist from a classic bruschetta recipe, swapping out tomatoes for delicious raspberries!

Ingredients

  • 1 baguette
  • 1 cup ricotta cheese
  • 2 cups raspberries fresh or thawed from frozen
  • 1/3 cup fresh basil
  • 1/2 juice of a lemon
  • 1 pinch salt
  • 1 tbsp olive oil for drizzling on bread before toasting
  • 1 tbsp balsamic glaze optional

Instructions

  • Preheat your oven to 350 – 400 F (depending on how crispy you like your toast) Start by slicing the baguette into roughly 1/2 inch pieces, drizzle olive oil on both sides. Toast the baguette slices for 5 minutes per side or longer if you like crispier slices.
  • Mix together the raspberries, basil, lemon juice and salt.
  • Spread a generous layer of ricotta cheese onto the toast slices.
  • Top with the raspberry mixture and serve immediately.

Notes

The cherry mixture keeps beautifully in the fridge for around 4 days.
